Crock Pot Potato Chowder




Found a new winter fav! Super easy and sooooo yummy! This is by Valerie McRae...she's done my hair and Mom M.'s while she was here for Dylan's blessing.

8 c. potatoes, peeled & diced
1/3 c. onions, chopped
3, 14 oz. cans of chicken broth
1, 10 3/4 oz. can of cream or chicken/mushroom soup
1, 8 oz. package of cream cheese, cubed
1/2 lb. bacon, cooked & crumbled
chives

Combine potatoes, onion, broth and cream of chicken soup in crock pot. Cover and cook on low 8-10 hours, high 4-5 hours. Add cream cheese and blend. Top with bacon and chives before serving. (So I always use lowfat cream cheese and soup & topped with a small amount of shredded cheese instead of the bacon. Really filling and so, so good!)

That does sound so yummy! I love soups and stews especially in the winter. I am definitely going to try this one!

That sounds delish! I made a fast and easy (turkey) noodle soup today after stake conference. Yum-O! Got to use up that turkey somehow. It's a wonderful feeling to get a sweater on and eat soup in Phoenix because it just doesn't happen every day. Thanks for sharing Sara!

Sounds really good. Might have to try it this week before we head out of town. It is finally turning colder out here and feeling more like winter. Yeay!
